muesli bars

These are the yummiest muesli bars I've found so far. They certainly don't last very long.  Soon I will be experimenting with the recipe to remove the nuts so they're suitable for kindy - nut free policy.  They are based on Nigella Lawsons Breakfast Bars.


Muesli Bars

1 can (390-400gm)sweetened condensed milk 
250gm rolled oats
75gm shredded coconut
100gm dried fruit
125gm nuts
125gm seeds (eg sunflower, sesame, pumpkin)


Warm milk (I use a large bowl in the microwave), add remaining ingredients, mix well and press into a lined and greased tin (mine is 20cm x 31cm).  Bake for one hour at 130C, cool for 15 minutes in tin and then cut into bars.






Next time I think I'll increase the dried fruit, add some more seeds and maybe a few choc bits to make up for removing the nuts.  Any other ideas let me know!!
